Nutella cheesecake

Today I “baked” a cheesecake from a new receipe I found online with nutella! It was super easy to make actually, it took me about 15 minutes to first crush all the digestive crackers to crumbles and mix with butter, then just mix the nutella with philadelphia cheese and glace sugar, put everything in the fridge for 2 hours and sprinkle coconut on top and then it was ready. I honestly think it was way to sweet for my taste as I am more a dark chocolate fan and I like sweet desserts but with something sour that “tones the sweet down”. I think next time I will do a lemon pie 🙂



Banana icecream

A healthy icecream option I make sometimes is homemade banana icecream. It’s delicious and has only one ingredient; bananas! It’s so easy and you only need three things to make it: 1: riped bananas (due to they have more flavour), 2: a plastic box for the freezer, 3: a handmixer or a blender. I always cut the bananas in small pieces and put in the freezer and when they are more or less frozen I use a handmixer because it goes faster (and less dishes) and I just mix until it has a creamy consistent and then it’s ready to eat 🙂 I think it taste lovely on it’s own, but it’s possible to add cacao, coconut or whatever flavour you want to add. Tonight’s dessert 🙂



The other day I read that popcorn is one of the few new members of superfood. I never thought that popcorn were unhealthy (only the sugar ones) but on the other side I didn’t expected it to be so beneficial for our health. I really love popcorn and the other day when we went to the cinema it felt wrong not to buy popcorn, because it fits so good together with a movie. The only thing is that you need to pop the popcorn yourself in a pan and without any oil and with as little salt as possible for the popcorn to benefit your health. Apparently popcorn are loaded with antioxidants, it lowers the blood pressure, contains B-vitamins and lowers bad cholesterol. Popcorn is a whole grain (unprocessed) and in recent studies it has even showed to prevent cancer and heart diseases. So I think it’s the perfect snack we can enjoy without feeling guilty eating too much 🙂

When I am home visiting family and friends in Sweden we go out so many times for a “fika” which means that you have a coffee and cake and stay talking sometimes for Hours! Its a big thing in Sweden and I guess it has a lot of things to do with the weather, there is not much else to do. I just really like to sit and relax over fika and talk about everything with friends.

If I have the chance to have a freshly squeezed juice from natural ingredients I would skip the coffee. With my mum and sister we went to this café a few times that has a beautiful terrace in the middle of the city centre and all pastries are home made and they make the best fresh juices I tried. My favourite juice in this place was simply made of oranges, apple and ginger, but lots of ginger that really burns when you drink it. Its supergood and especially when you eat something really sweet on the side. Next year I will really try to wake up early and make a fresh juice before work.
